Roasted Asparagus (with cheese)

Roasted Asparagus is in our weekly veggie rotation. Here’s how I make it:

  1. Purchase a bunch of asparagus
  2. Wash, and then trip off all the bottoms
  3. Lay these out in a large pan so all the asparagus are side by side in a single row. My 6 year old likes to help me with this task.
  4. Drizzle canola oil over all the asparagus along and add salt and pepper to all of them.
  5. Let them bake in a 375 oven for about 7 minutes and then take them out to give them a shake so they’re rotated. At this point I also add a cheese on top. I used to use goat cheese crumbles on top but recently I’ve been using shaved parmesan and it’s been a huge hit.
  6. Put them back in the oven for another 10 minutes and then make sure they look both fully tender and also crisp.

The kids go wild for these asparagus and after they run to the pan to see if there’s any remaining cheese for them to pick off the pan and eat. I have to pull my daughter away. I hope you enjoy!
