Here’s a veggie I don’t roast too often since it requires even more work than roasting carrots but once a quarter I’ll select this veggie to roast.
Recipe:
- Purchase a bag of parsnips
- Peel said parsnips
- Cut the parsnips into strips for roasting and make sure to discard the center “core” of the parsnip since this part is very bitter.

4. Sautee your strips in a large frying pan on medium-low so they can brown.

5. Pour some water into the pan and quickly cover it to let it steam for about 5-7 minutes. Uncover and poke one with a fork. If the fork goes through, this step is done.
6. I usually stick the frying pan into the oven for a bit and then put them back on the stove stop to finish browning for a while (maybe 15 minutes on low).
7. At this point I add salt and take them off to enjoy! They take a while to get like this but they’re so tasty!
